A original NAND dump is needed, mainly for serial number and already online activated profile. Even though all online functionalities works (playing, leaderboards, score posting, etc) the music store doesn't, believed to be due to some error with the Wii Shop Channel.

I've tested the MPA (MIDI Pro Adapter) following those[https://wiki.dolphin-emu.org/index.php?title=How_to_use_the_Official_GameCube_Controller_Adapter_for_Wii_U_in_Dolphin] instructions as if the MPA was the WiiU Gamecube Controller, and it works. I can't test with other instruments as I don't own them, but I don't see why they wouldn't work using the same process.
